History behind this seed collection

From the fruits and vegetables that I collected from farm stands in the 2024 growing season, from May to September were Tomato varieties, watermelons, peppers, eggplants, cucumbers and more!

In this post, I am showing the 6 seeds that I managed to preserve in their own fermentation. No water was added whatsoever, the amount of liquid in the jars is solely their own fermentation. Additionally, the jars have been outside for several weeks prior to today, in freezing cold temps.

#1 Eggplant

The eggplant seeds were some of the toughest to sit in their own fermentation outside in freezing temps.

#2 Heirloom Tomatoes

As you can see, this jar actually began to develop live bacteria that made it to the top.

#3 Roma Tomatoes

These tomatoes were just like the other larger sizes up to large cherry, they developed a lot of mold and fungus looking stuff compared to smaller varieties.

#4 Large Cherry Tomatoes

These tomatoes are often referred to as flavor bombs at grocery stores but are in fact considered a cherry tomato.

#5 Small Cherry Tomatoes

Perhaps the amount of tomatoes that are inside provided a better insulation because of space, therefore not much mold has formed. The other thing about these tomatoes is that they were stored about a week or two after the other ones and may of had not as much time to ferment.

#6 Bell Peppers

Although these seeds and some of the remaining vegetable attached look strong, there is somewhat of a gloomy aroma and texture to them!
